Thank you so much to Iowa Pork and Hy-Vee for helping us throw the ultimate Pork-A-Palooza! Chef Alex even created us our own signature item...the Van and Bonnie Breakfast Bacon Bomb. IT IS DELICIOUS! So delicious, we ran out in fact! If you missed out, he sent us home with the recipe!
THE VAN AND BONNIE BREAKFAST BACON BOMB
Ingredients:
- 1.5 lbs bacon (NOT thick cut)
- 1 lb of Hy-Vee ground breakfast sausage
- 3 eggs, scrambled until set
- 1/4 cup Canadian bacon, diced small
- 1/4 cup chorizo, cooked and crumbled
- 1/4 cup prosciutto, diced small
-1/4 cup smoked pork, diced small
-1/2 cup shredded cheddar cheese
- Maple syrup
Lay down 1.5 feet of plastic wrap.
Place 7-8 strips of bacon close to each other, then weave a second layer of back through the original strips to make a mat of back that is approximately one square foot.
Evenly spread 1 lb of breakfast sausage over the bacon. This will be a thin layer, about 3/8 inches thick.
Mix eggs with the remaining meat and place mixture in the middle of the sausage. Sprinkle with cheddar cheese.
Forward roll the sausage and mat bacon. Press together tightly. Drizzle syrup over the bacon roll.
Place in a preheated 350 degree oven and cook for one hour or until internal temperature is 167 degrees
