Andy's brisket turned out OK

What is it they say, life's a learning process?  Well, Andy found that out again last weekend as he tried his hand at smoking a couple of briskets.  Already a long process, it took about 21 hours due to the cold weather and learning the ins and outs of the finishing process.  That means in order to have it ready for Saturday evening dinner, he started at midnight Friday night:

Brisket 1

They were trimmed and rubbed on Wednesday, so on go the hooks and out comes the cooker:

Brisket 2

After about 9 hours there.

Brisket 3

It took about 11 more hours wrapped in aluminum foil to get them finished, but about three hours were lost between learning what temp was appropriate and adding more charcoal.  Finally, about 8 p.m.

Brisket 4

Despite a few angry and hungry folks, all's well that ends well and the taste was reported to be "excellent"

Brisket 4

In fact, through word of mouth one of Andy's friends has offered to pay him to make another one.  Is he up to that anytime soon?  Listen to Friday's Big Show to find out.
